French Mussels
INGREDIENTS
- 1kg Shelled Mussels
- 3 tablespoons olive oil
- 3 Spring onions, chopped finely
- 2 cloves of garlic, chopped finely
- 250g fresh tomatoes, diced
- 1/2 cup white wine
- 1/2 cup flat leaf parsley, chopped finely
METHOD
Step 1
Scrub the mussels thoroughly and remove
“the beard”.
Step 2
In a deep pan set on
high heat, add the oil.
Add the mussels, garlic, spring onions, tomatoes and wine. Toss roughly to coat all the mussels. Place the lid on tightly and cook for 5-6 minutes.
Step 3
Add the parsley, toss through and serve immediately with
crusty bread.
