INGREDIENTS

  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, finely diced

  • 750ml tomato passata, or
    1 kg tomatoes, skinned & quartered
  • 1 bay leaf
  • 1 Sprig of fresh oregano
  • 1 Sprig of fresh thyme
  • 10 fresh basil leaves
  • 1 teaspoon sugar
  • 1/2 cup water
  • Salt and pepper to taste
