Napoletana sauce
INGREDIENTS
- 3 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, finely diced
- 1 medium onion, finely diced
- 2 garlic cloves, finely chopped
- 1 red chilli, chopped finely
- 750ml tomato passata, or
1 kg tomatoes, skinned & quartered - 1 bay leaf
- 1 Sprig of fresh oregano
- 1 Sprig of fresh thyme
- 10 fresh basil leaves
- 1 teaspoon sugar
- 1/2 cup water
- Salt and pepper to taste
METHOD
Step 1
Heat the oil and butter in a pan and sauté the onion on medium heat until transparent.
Step 2
Add the garlic and chilli (if using) and cook for 3 minutes. Add the remaining ingredients and simmer for 20 minutes.
Step 3
This sauce can be used for Pasta, Gnocchi, Pizza or Arancini
