Fred's pine mushroom ragu
INGREDIENTS
- 3 tablespoons olive oil
- 1 tablespoon butter
- 1 large onion, chopped finely
- 4 cloves of garlic, chopped finely
- 1 red chili, diced finely
- 750g fresh pine mushrooms, 1cm diced
- 1kg roma tomatoes, diced or,
750ml tomato passata - 250ml light chicken stock or water
- 3 tablespoons chopped parsley
- 1 tablespoon olive oil, extra (optional)
- 3/4 cup grated grana padano
METHOD
Step 1
Heat a pan to medium and add the oil, butter and onion and sauté for a few minutes. Season with salt and pepper then add the garlic and chili, cooking for a further minute.
Step 2
Add the mushrooms and sauté for a few minutes further. Pour in the passata or chopped tomatoes, add the stock or water and simmer gently for 30 minutes.
Step 3
Lastly, just prior to serving, stir in the parsley and the extra tablespoon olive oil (if desired).
Step 4
Serve with cooked pasta of your choice and the grated cheese.
