INGREDIENTS

  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 large onion, chopped finely
  • 4 cloves of garlic, chopped finely
  • 1 red chili, diced finely
  • 750g fresh pine mushrooms, 1cm diced
  • 1kg roma tomatoes, diced or,
    750ml tomato passata
  • 250ml light chicken stock or water
  • 3 tablespoons chopped parsley
  • 1 tablespoon olive oil, extra (optional)
  • 3/4 cup grated grana padano
