The Wine

The wine is a light blush colour and exudes citrus, pear and peach and tropical aromas. The palate is well rounded and complex but has great freshness and minerality. The wine shows depth, refreshing acidity and good length, enjoy with a prawn pasta or fish and chips.


The grapes for the wine have been selected from our one of our cooler Pinot Grigio vineyards at Cheshunt which produces high quality fruit with great acidity and aromatics. The fruit was machine harvested, crushed and fermented on skins for seven days, the juice was pumped over the skins daily to impart character, texture and extract subtle colour from the skins. After fermentation the juice was drained and aged in neutral barrels for 4 months, with a little lees stirring to achieve a lovely balanced wine. A small portion of wine was fermented in stainless steel and blended back in before bottling to add freshness and acidity.
