The wine is a deep garnet colour with golden hues. The nose is all allure and seduction with rose petal, chocolate, liquorice, star anise, tar and savoury cigar box aromas. The palate is rich and mouth-filling with savoury herbs, blackcurrant, liquorice, dried fruit, and fine chewy tannins to finish
Winemaking
The fruit for this Nebbiolo was selected off a new Nebbiolo vineyard which is planted on one of our premier sites. The clone is called 220, this clone is noted for its ability to produce a wine with richer colour and concentration of flavour. The grapes were hand harvested then crushed and de-stemmed, fermentation is allowed to begin immediately. The juice is inoculated with a yeast strain form Barolo. Fermentation lasts for about five days after which the wine is lightly pressed and allowed to finish fermentation in oak barrels, here polymerising helps to soften and round the tannins. The wine then goes through malolactic fermentation in barrel where it is aged for 20 months prior to bottling.
