Our Shiraz is the result of a new winemaking style. Over the past 10 years we have been working toward creating a Shiraz style that has complexity with elegance over power, balanced fruit flavour and integrity.

Vintage 2019
Winter was relatively dry, but lots of snow on the Alps helped to fill dams and rivers in preparation for the growing season, which was even with near perfect conditions. With the prediction of a dry summer we chose to irrigate the vineyards during October to assist and maintain vine health. We also had a storm in December which produced 100mm of rain, which was very timely and helped to keep the vineyards in good condition for the summer temperatures experience in late January.
Harvest ran smoothly helped by great weather. Grapes were in perfect condition and we are really pleased with the quality of all the exciting wines produced from vintage 2019.

Vinification
Whole bunches of shiraz were hand harvested and placed in the bottom of open top fermenters, which helps to create more floral characters and elegance in the wine. The remaining grapes were pumped on top and were cooled to below 10 degrees Celsius. We maintained a low temperature for 5 days allowing natural fermentation to begin before moving the tanks into the sun to warm up and adding yeast to continue fermentation. The tanks were hand plunged to encourage soft extraction of flavour and chalky silky tannins. The grapes were lightly pressed and the juice placed in barrels for 12 months before bottling.

The Wine
The colour is a deep brick red with violet hues. The nose is excitingly complex with red and black berries, plums, spices, cloves, violets, liquorish, earthiness and subtle sweet oak notes. The palate has lovely density and weight. It has soft texture, length and persistence with earthy red berry flavours, hints of dark chocolate and white pepper. It will age well if you resist the temptation to drink now. Pair with flame-grilled beef rib eye with shiraz reduction.
