Our 2018 Shiraz is the result of a new winemaking style. Over the past 10 years we have been working toward creating a Shiraz style that has complexity with elegance over power, balanced fruit flavour and integrity.
The 2018 growing season provided many challenges including some extreme weather events such as rain, humidity, windstorms and heatwaves. The King Valley had 80mm of rain in November providing some deep watering for the vines, which held them in good stead with the extreme temperatures encountered throughout December and January. Throughout February, the King Valley had some classical ripening conditions with high 20 to low 30 degree-days followed by the beautiful cool nights and the cooling King Valley breeze that runs through our vineyards. Yields will be average this year, which bears well for some top quality grapes and some intense, flavoursome wines.
Whole bunches of shiraz were hand harvested and placed in the bottom of open top fermenters, which helps to create more floral characters and elegance in the wine. The remaining grapes were pumped on top and were cooled to below 10 degrees Celsius. We maintained a low temperature for 5 days allowing natural fermentation to begin before moving the tanks into the sun to warm up and adding yeast to continue fermentation. The tanks were hand plunged to encourage soft extraction of flavour and chalky silky tannins. The grapes were lightly pressed and the juice placed in barrels for 12 months before bottling.

The colour is a deep brick red with violet hues. The nose is excitingly complex with red and black berries, plums, spices, cloves, violets, liquorish, earthiness and subtle sweet oak notes. The palate has lovely density and weight. It has soft texture, length and persistence with earthy red berry flavours, hints of dark chocolate and white pepper. It will age well if you resist the temptation to drink now. Pair with flame-grilled beef rib eye with shiraz reduction.
