Variety Information
Prosecco: dry, lemony, and bubbling, is Italy's answer to refreshing, well-made, sparkling wine. Created from Prosecco grapes in the northern Veneto region of Italy in the foothills of the Alps; We plant Prosecco on the cool King Valley floor. Prosecco is light, affordable & fun.

Vintage 2018
The 2018 growing season provided many challenges including some extreme weather events such as rain, humidity, windstorms and heatwaves. The King Valley had 80mm of rain in November providing some deep watering for the vines, which held them in good stead with the extreme temperatures encountered throughout December and January. Throughout February the King Valley had some classical ripening conditions with high 20 to low 30 degree-days followed by the beautiful cool nights and the cooling King Valley breeze that runs through our vineyards. Yields will be average this year, which bears well for some top quality grapes and some intense, flavoursome wines.

Vinification
The grapes were hand harvested and whole bunch pressed. The juice was fermented in stainless steel at a cool temperature of fourteen degrees Celsius. Once dry, the base wine had the lees stirred once a week for four months prior to bottling to give more texture and complexity to the back palate. To create the fizz the wine went through a second fermentation in pressurised tanks, known as the “charmat method”, this process took about four weeks, after which time the wine was bottled, ready to drink.

The Wine
This wine is a light straw colour with lime hues. The nose explodes from the glass with sweet sherbet, lemon, lime and jasmine aromas. Yeasty and earthy characters add complexity, with added brioche notes. The palate is creamy and refreshing zingy with lemon, lime acidity. The wine has lovely length and softness with a touch of sweetness but a long dry finish. Serve with Sydney rock oysters or lightly grilled scallops topped with lemon zest.
